<image:title>Blog - Energy Bites: The Perfect Everyday Snack - To roll the energy bites, I just use my hands to grab a chunk of the “batter”, squeeze it together as a sphere and start to roll it around in my palm to make a decent ball shape. There is no such thing as a perfect energy bite shape. Each one always turns out a little bit unique. I do try and take approximately the same amount in my hand each time though so that the energy bites are all relatively the same size.</image:title>

<image:title>Blog - Energy Bites: The Perfect Everyday Snack - Once all your energy bites have been rolled, put them into containers. I prefer to put them into multiple smaller containers so that I can freeze them and pull out just one container at a time. I put all containers in the freezer for at least a few hours right after rolling the bites to help them solidify, and I pull out one container at a time into the fridge as needed. I typically make 24 energy bites at a time, and freeze them in containers of 8.</image:title>

<image:caption>Put all of the dry ingredients into a bowl: oats, flax, coconut, and chocolate chips. I probably add at least double the amount of oats compared to the amount of flax and coconut. In terms of chocolate chips, feel free to add whatever amount you prefer. If you’re not a chocolate chip fan, feel free to exclude them from the recipe as well, totally up to you.</image:caption>

<image:title>Blog - Energy Bites: The Perfect Everyday Snack - Once you’ve done a quick mix of the dry ingredients, add the peanut butter and honey to the bowl and start mixing! The honey and peanut butter are the sticky components that will hold the energy bites together so definitely don’t be shy on the amount. I normally start mixing, then end up adding a bit more peanut butter and honey to properly coat all of the dry ingredients to make them sticky enough to hold as a ball.</image:title>

<image:title>Blog - Energy Bites: The Perfect Everyday Snack - Continue mixing all ingredients until everything is properly incorporated and there are no loose oats at the bottom of the bowl. Once all the ingredients have been mixed together, you can either start rolling the energy bites right away, or you can put the bowl in the fridge for 15 minutes or so before rolling. The cold does help make the ingredients stick together a bit better, but sometimes I don’t have the time or am a bit impatient.</image:title>

<image:title>Blog - 25 and Feelin’ So Alive - Third, a cast iron skillet! Lately I’ve made a few recipes where I had to fry ingredients in a pan and then put the pan into the oven, but because I didn’t have a cast iron skillet, I used a frying pan on the stove, then poured the ingredients into a corningware dish to go in the oven. Not the end of the world, but I felt like a cast iron skillet could have come in handy. This gadget is something I may not use often, but it will definitely come in handy for specific recipes. I think I’d like to try a frittata in the cast iron skillet soon. I’ll let you know how it goes.</image:title>

<image:title>Blog - 25 and Feelin’ So Alive - First up: a popcorn maker! In 2021, I’ve been making a LOT of popcorn! I’ve always loved popcorn, but lately I REALLY love popcorn. As a kid, I always just had microwave popcorn, but have recently branched out, making popcorn on the stove. Given how often I was opting to go for this delicious snack, I decided I wanted an air popper popcorn maker, so this gift definitely did not disappoint. All you have to do is put the kernels in and switch it to “on”, it takes 2-3 minutes to pop, and then you turn it off. It also leaves no mess which is amazing, and you can just add whatever additional seasoning you desire after the kernels are popped. My go-to popcorn seasoning is just a bit of melted butter and some sprinkled on sea salt, but I’ve also dabbled in popcorn seasonings like dill pickle.</image:title>

<image:title>Blog - 25 and Feelin’ So Alive - Next, I got a BBQ basket for grilling vegetables. This is something I’ve wanted for a while, and is perfect for the summer! It’s such an easy way to cook lots of veggies at once, and also convenient because you can cook veggies on the BBQ at the same time as your protein of choice. I’m looking forward to cooking up sweet potato, mushrooms, zucchini, onions, and more with this awesome BBQ grilling basket.</image:title>

<image:title>Blog - 25 and Feelin’ So Alive - This set of plastic stemless wine glasses is going to be perfect for using outside this summer, not to mention the beautiful bamboo tray to go with them. I never like to bring glass outside to the patio, so having a plastic option is definitely ideal. Because they are stemless, they are super versatile so definitely don’t just need to be used for wine - water, juice, lemonade, iced tea, sangria.. you name it!</image:title>

A summery salad will be awesome in these bowls, although I think I’ll be filling the biggest one with popcorn! ;)</image:title>

<image:caption>Although this doesn’t quite match up to having a real burger, it was pretty great! I made this recipe twice in the 28 days, and it really satisfied that “Friday night burger craving”. I never included the avocado that the recipe calls for, but the bacon was a really nice touch, and the sauce of mixing mayo with ketchup was excellent. Recipe HERE.</image:caption>

      <image:title>Blog - Whole 30… Well, Technically Whole 28 - Spaghetti Squash Casserole</image:title>
<image:caption>This one actually blew my mind. Similar to the potato casserole, the coconut milk has a really nice touch here. I definitely didn’t follow the recipe exactly in terms of which veggies to include, I just used whatever I had on hand or whatever was cooked and leftover from the previous day, but wow was this good. If you haven’t tried spaghetti squash or are trying to think of new things to do with spaghetti squash, I highly recommend this recipe. Get the recipe HERE.</image:caption>

      <image:title>Blog - Whole 30… Well, Technically Whole 28 - Potato Casserole</image:title>
<image:caption>This recipe was brand new to me and I will definitely continue to make it. I found the flavour and creaminess of the coconut milk to resemble that of alfredo sauce, but without having to use butter and milk. It was also super filling and made 4 large portion sizes, which was ideal for leftovers. Find the recipe I used HERE.</image:caption>

      <image:title>Blog - Whole 30… Well, Technically Whole 28 - Loaded Sweet Potatoes</image:title>
<image:caption>This one is a fun recipe because it’s kind of a “whatever you have left on hand at the end of a work week” type of recipe. I made this on a Friday night and did just that. Instead of bacon, I had leftover cooked ground beef, so I added that on top of the sweet potato base, made guacamole, added green onion, and of course the best part - a sunny side up egg overtop so that when you break the yolk open, it adds more flavour and sauce to coat the whole meal. My creation was based on this Recipe.</image:caption>

      <image:title>Blog - Favourite Winnipeg Bike Routes - Wellington Crescent - Assiniboine Park - Wolseley</image:title>
<image:caption>In the summertime, vehicle traffic is restricted on Wellington, making it very bike friendly. I typically come from the downtown area to Wellington, bike through Assiniboine Park, then cross the bridge over to the Wolseley side. One of my favourite parts about this route is the variety. It’s a combination of streets and bike paths, and you can even bike around the outskirts of the zoo and check out some of the animals. Plus, once you cross over the walking bridge, you can sneak over to Sargeant Sundae for an ice cream treat! ;) Check out the route HERE.</image:caption>

      <image:title>Blog - Favourite Winnipeg Bike Routes - Transitway</image:title>
<image:caption>I can’t recommend the Transitway path enough! It’s meant for bikes, it’s relatively new so in very good shape, and you can do a LOT of continuous riding without stopping. The main transitway path can lead you into the University of Manitoba or you can branch off at Bishop Grandin where there are additional trails. The only thing to be cautious of with taking the Transitway path is making sure it’s not too windy of a day! It’s pretty wide open so it can be a bit of a challenge with the wind against you. Check out the route HERE.</image:caption>

<image:title>Blog - Favourite Winnipeg Bike Routes - Gateway Road (Northeast Pioneers Greenway)</image:title>
<image:caption>The greenway along Gateway Road, called the Northeast Pioneers Greenway, is another one of my favourites. I love this trail because it’s a nice long stretch, past the North Perimeter quite a ways. For the most part there are minimal stops other than a few sets of traffic lights along the way, but if you go early in the morning, the path is not busy and you’ll barely need to stop at all. Check it out HERE.</image:caption>

      <image:title>Blog - Favourite Winnipeg Bike Routes - Churchill Drive</image:title>
<image:caption>Churchill Drive is another fun stretch since vehicle traffic is also restricted for the summer months. You can choose to take the white rock path that goes closer to the river, or just stay on the road and bike there - both are great options! The Churchill Drive path connects with another white rock path that takes you all the way to the Forks downtown! It’s a much simpler way to get to downtown than having to ride along Osborne. Check out the route Here.</image:caption>

      <image:title>Blog - Favourite Winnipeg Bike Routes - Egerton - Archibald or Egerton - Fermor</image:title>
<image:caption>Egerton is another street blocked off from vehicle traffic in the summer, which makes for an easier time biking. Although Egerton itself isn’t a super long stretch like Wellington is, it’s a great starting point for then branching off to the biking path on Archibald or Fermor, after passing by the Windsor Park Golf Course (which I also recommend checking out if you’re into golfing, by the way). Check out the route HERE.</image:caption>

<image:caption>If you’re looking for a way to incorporate eggs into your breakfast without having to cook eggs every morning (who has time for that?!?) these egg muffins are perfect for you! I typically include sausage or bacon, mushrooms, spinach and green onions. Simply add your veggies and (cooked) meat into sprayed muffin tins and then pour whisked eggs (can also add milk in with eggs if you want) on top. <image:caption>I was introduced to this amazing dish in 2019 while participating in a study exchange program with students from Israel. The students taught us how to make shakshuka and it most definitely did not disappoint. When I make it at home, I’ll often serve it with feta cheese on top and with a naan bread on the side. I loosely follow this recipe when I make shakshuka, but I exclude bell peppers, and opt for diced tomatoes instead of whole tomatoes.</image:caption>

<image:title>Blog - Simple and Delicious Egg Recipes - Over Easy Eggs</image:title>
<image:caption>I know this is more of a “standard” way to cook eggs but… have you ever tried putting over easy eggs on top of sweet potatoes? potatoes? hash browns? Over easy eggs are perfect for an additional burst of protein (not to mention flavour) for any meal of the day. When you break the yolk it creates a really nice sauce over whatever you’re eating!</image:caption>
